Looking for the perfect side for your meal? These amazing roasted garlic potatoes with parmesan and lemon are crispy and golden on the outside and fluffy on the inside. Potatoes are boiled until soft and fluffy, seasoned with garlic, herbs, lemon, and parmesan, then baked or air fried pan until crisp perfection. So easy to make and SO good, it’s a must try.

So what makes these crispy parmesan garlic potatoes so good? To start with, you par-boil the cut potatoes, then shake them in a bowl to ensure they get lovely fluffy yet crisp. Next, place them into a hot greased baking tray or air fryer basket and roast them to get those golden, crunchy edges.

What you’ll need:

  • Potatoes: I like using either Russet or Yukon gold for my roast potatoes.
  • Olive oil: The combination of olive oil with garlic and parmesan is absolutely delicious.
  • Minced garlic: Fresh garlic is a must, I used a garlic press to mince mine.
  • Parmesan: I buy the wedges and grate it myself, for recipe I ran it through a food processor.
  • Dried herbs: I used Italian seasoning with is a mix of dried oregano and parsley.
  • Salt and fresh cracked black pepper: Freshly cracked pepper makes a huge difference in recipes with simple ingredients. 
  • Lemon + Fresh herbs: Lemon juice and a fresh herb such as chives or parsley help balance out the oil and garlic flavors.

Tips for the best roast potatoes 

  • Parboiling potatoes to precook them ensures a crispy exterior and a fluffy soft interior, it’s a must when making roast potatoes.
  • Guarantee an even distribution of flavor by mixing in the seasonings together along with the oil and lemon juice as you toss your potatoes. This step helps fluff up the potatoes and all the loose edges will create a crispy edge. 
  • Roast potatoes can be made in either the oven or air fryer; regardless of which method you use make sure the baking tray or air fryer basket is hot when you add the potatoes to cook. The potatoes need to be flipped once while roasting.Parmesan Garlic Roast Potatoes

Ingredients
  • 3 lbs potatoes; Russet or Yukon, washed and cut into two inches pieces 
  • ¼ cup olive oil
  • 2 tablespoon minced garlic; about 8-10 large garlic cloves 
  • ½ cup fresh grated Parmesan cheese
  • 2 tablespoon lemon juice
  • 1 tablespoon dried Italian seasoning; or any dried herb
  • 1 teaspoon salt; adjust to taste 
  • 2 teaspoon freshly ground pepper 
  • 3 tablespoon fresh chives; or any fresh herb of choice
  • 2 tablespoon salt; for par boiling 
Method
PREP
  1. Wash and cut potatoes into two inch pieces. Add them to a pot and cover them in water. Add in the two tablespoons salt and bring to a boil. Cook until fork tender.
  2. Drain the potatoes and place in a large bowl. Add in the olive oil, garlic, salt, herbs, pepper, lemon juice, and parmesan and toss well to evenly coat each piece of potato.
BAKE
  1. Grease and heat the baking tray in a 400 F preheated oven for 5 minutes. Add the potatoes to the hot tray and bake for 30 minutes; flipping half way through.
  2. Remove once golden and crispy, check for salt, adjust if needed and garnish with fresh herbs.
AIR FRY
  1. Grease and heat the air fryer basket in a 400 F preheated air fryer for 3 minutes. Add the potatoes to the hot basket and air fry for 18-20 minutes; flipping half way through.
  2. Remove once golden and crispy, check for salt, adjust if needed and garnish with fresh herbs.
