A tropical twist on the traditional nariyal ke ladoo, these Piña Colada Ladoos are soft, creamy, and absolutely delightful.
In celebration of Ganesh Chaturthi I wanted to share an easy recipe that can be whipped up in minutes. Enter these piña colada ladoos. Creamy coconut, tropical pineapple, and sweet milk make for the most divine treat! These ladoos can easily be made into modaks and store really well!
Piña Colada Ladoos Ingredients
- Desiccated coconut: Unsweetened is the key here, using the sweetened variety would make your ladoos cloyingly sweet. Toasting also helps release the natural flavors of coconut so don’t skip that step!
- Pineapple: Feel free to use fresh, frozen (thawed), or canned. If you’re using canned, be sure to drain out any excess liquids.
- Sweetened condensed milk: Here’s where the sweetness comes into play along with the creamy base.
- Cardamom: You use crushed or powder. The delicate floral taste of cardamom pairs beautifully with the coconut and pineapple.
How to make Piña Colada Ladoos
To make piña colada ladoos you’ll need to lightly roast the desiccated coconut. Once cooled, mix with diced pineapple, sweetened condensed milk, and cardamom powder. Give these ingredients a really good mix until everything is incorporated. Grease your hands with ghee and roll the mixture into ladoos.
How to Store
Store the ladoos in an airtight container at room temperature for 1-2 days. Alternatively, store in the refrigerator for up to 5-7 days in an airtight container.
- 3 cup desiccated coconut; toasted
- ¼ cup pineapple; diced
- ¾ cup sweetened condensed milk
- 1 teaspoon cardamom powder
- 2 tablespoon ghee
- 2 tablespoon desiccated coconut; for garnish
- Warm a pan on medium heat and toast the desiccated coconut until it’s light golden in color.
- As the coconut cools, dice the pineapple uniformly.
- In a large mixing bowl, mix together toasted coconut, diced pineapple, sweetened condensed milk, and cardamom powder.
- Grease your hands with some ghee, add about two tablespoons of pina colada ladoo mixture into the palms of your hands and squeeze to bring it together. Roll into a ladoo shape.
- Dust the ladoos in some desiccated coconut.
- Serve + Enjoy
