It’s no secret that my little girl and I LOVE pizza and pasta. So much so that my husband often jokes that we are two “titlis from Italy = butterflies from Italy”. NY style slices, brick oven margherita, naan style and now these flaky Paratha ones are usually our go to.
When my little one comes home from school there is often little time left between that and her next activity. I’m always looking for fun and filling bites that I don’t have to convince her to eat but will keep her full until dinner. Enter Paratha Pesto Pizza. I always have a packet of Kawan Parathas in my freezer and usually a tub a of pesto. A few layers of her favorite toppings, a short bake and we have a cheesy little pizza that she’s happy to eat! For this recipe we used the plain full sized Kawan parathas.
A few things I love about this recipe:
- You can eat it room temperature and it tastes just as good
- It makes a great lunchbox or snack option
- You can customize it to your favorite toppings
- It comes together within minutes
I’m partnering with Kawan to help share recipes and meal ideas. All opinions expressed are my own.
Some of our favorite toppings for Paratha Pesto Pizzas include tomatoes, mozzarella, bell peppers, jalapeños, red onions, and/or arugula.
Basic Pesto Recipe:
- 2 cups fresh basil leaves (or your favorite herb)
- 2 tablespoons pine nuts or walnuts
- 2 cloves garlic
- ½ cup extra-virgin olive oil
- ½ cup freshly grated parmesan cheese
- Salt & Pepper to taste
– Mix all ingredients in a food processor and serve.
For this recipe I used a basil pesto, you could easily substitute it for a cilantro pesto or a peppery arugula pesto!
- 4 Kawan Parathas
- ½ cup pesto
- 1 cup shredded mozzarella
- ⅓ cup sliced tomatoes & bell peppers (or your favorite topping)
- Pre heat oven to 350 F.
- Cook parathas according to directions on package.
- Lay your parathas on a sheet pan and layer with the pesto, followed by mozzarella cheese and lastly toppings of your choice.
- Bake for 7-8 minutes, or until cheese is melted and bubbly.
- Cut and serve.
Enjoy,
