In the 1940s a shop in Nairobi, Kenya, called Maru’s became famous for their crispy potato bhajias. The roadside restaurant would sell countless plates of freshly fried bhajiyas along with a fresh tomato chutney and became a go to for locals. Eventually the family moved to the UK where they opened shop in Wembley, making and serving the original recipe, but Maru Bhajiya had already made an impression on local Kenyans ans Indian immigrants and now you can find this iconic dish being served around the world. A fresh and juicy chutney of sweet, tangy, and spicy notes that pairs perfectly with the iconic Kenyan snack, Maru Bhajiya.

Serves: 1.5 cup
Ingredients
  • ½ cup cucumber; chopped (about half a cucumber)
  • ½ cup tomatoes; chopped (about one large tomato)
  • ⅓ cup carrots; chopped (about one carrot)
  • 3 tablespoon cilantro; leaves + stalks; chopped
  • 2 green chilies; chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger; grated 
  • ¼ teaspoon jeera / cumin powder
  • 1 teaspoon sugar
  • 1 teaspoon salt; adjust to taste
Method
  1. In a blender, pulse all the ingredients to a salsa/rough chutney.
  2. Store in an airtight container in the refrigerator until ready to serve.
