Mojitos are one of my favorite summer drinks. Whether it’s in cocktail or mocktail form, you just can’t beat the combination of fresh mint, tangy lime and sweet fizz. To make this combination even better I love adding my favorite fruits. This Lychee Rose Mojito has been a long time favorite and now this Mango one is the ultimate summer drink! This recipe makes 4-6 servings. Start with a mint simple syrup, mango pulp, add the alcohol, and you’re ready to go!

This would be such a great refreshment for parties, just make it sans alcohol in a pitcher and allow everyone to customize their own drink. Enjoy this tropical cocktail with refills, without middling mint all night long. 😉 If you’re making this ahead of time, make and store the sweet mango mint mixture in the refrigerator for up to 2-3 days. When you’re ready to serve, stir in club soda and pour into glasses of ice. Garnish with fresh mint leaves and slices of lime, and you’re ready to go!

How to make Mango Mojito

To make the best mango mojito start with a mint  simple syrup. Once this is made mix in the mango purée and you can easily turn it into a full pitcher of mojitos, and serve them up by the glass. Such an easy way to make cocktails for a party!

MANGOES 

I like to use mango purée for this recipe. Simply take fresh mango pieces and purée in a food processor until smooth. If you don’t have sweet, fresh mangoes you can use store bought purée. Alternatively you could use mango juice if the first two are not available.

MINT SIMPLE SYRUP

To make the mint simple syrup: Combine granulated sugar and water in a saucepan, and bring the mixture to a simmer. Stir until the sugar fully dissolves, add the mint and then simmer another 3 minutes without stirring. Set up a sieve over a glass jar and pour the syrup through the strainer. Allow the simple syrup sit in the refrigerator to cool for about 30 minutes.

ASSEMBLING MANGO MOJITOS

Once you have the mint syrup ready, pour into a pitcher. Add the mango pulp, rum and lime juice. Before serving, add club mix well and fill ice filled glasses. Garnish with mint leaves and lime wedges.

Ingredients
MINT SIMPLE SYRUP:
  • 1 cup white sugar
  • 1 cup water
  • ⅔ cup fresh mint leaves
MANGO MOJITOS:
  • 1 cup mango purée
  • 2 cup white rum (16 ounces)
  • 1 cup fresh lime juice (6-8 limes)
  • 2 cup club soda
GARNISH:
  • Fresh lime wedges
  • Mint sprigs
Method
MINT SIMPLE SYRUP:
  1. In a small saucepan set over medium-high heat, bring sugar and water to a low boil/simmer.
  2. Stir until the sugar dissolves and then add in the mint leaves. Simmer 3-4 more minutes, without stirring.
  3. Pour the simple syrup over a mesh strainer set over a glass jar.
  4. Allow the simple syrup to cool in the refrigerator for about 30 minutes.
MANGO MOJITOS:
  1. Once the simple syrup has cooled, pour it into a large pitcher followed by the mango puree, rum and lime juice.
  2. Stir. When ready to serve, add the club soda and gently stir. Pour into ice-filled glasses and garnish with lime wedges and fresh mint leaves.
Notes
If making a cocktail version; omit the the rum and double the club soda

Use fresh mango puree when available, else you can use canned puree or mango juice
