Malai Kulfi Sandwiches: Malai Kulfi sandwiched between wafer cookies, dipped in white chocolate and sprinkles! It’s a Holi dessert your family will love.
When thinking of a Holi dessert this year I wanted something that would appeal to all three of us. These Malai Kulfi Sandwiches have a bit of nostalgia for all three of us, wafer cookies for my husband, kulfi for me and our daughter’s treasured sprinkles, which no celebration is complete without. These would be such a fun party dessert!

For the Malai Kulfi I used my Funfetti Malai Kulfi recipe and set it in a shallow 7x 9 Pyrex container lined with wax paper. This recipe is made with a handful of ingredients and is eggless! You can also use store bought ice cream or kulfi if it’s easier.
Any flavor wafer cookies will work, I used both mango and strawberry flavor. For the sprinkles I mixed a few pastel shades, but how fun would these be with some traditional rainbow jimmies? This is such a fun way to make family memories! Line up everyone assembly style and get to work. We made these together and I loved how much fun our daughter had putting on (and eating) the sprinkles!

To assemble your Kulfi Sandwiches, you’ll need:
20 wafer cookies
kulfi/ice cream of choice
1 cup white chocolate candy melts
1 teaspoon cooking oil
1/3 cup sprinkles
food dye; your favorite colors
- Slice the kulfi into horizontal strips and sandwich them in between wafter cookies and re freeze them.
- Line a tray that will fit into your freezer with wax or parchment paper.
- In a microwave safe bowl add the candy melts and oil and microwave until melted. Divide the melted chocolate melts into 2-3 different bowls and add a drop of food coloring each for a variety of colors.
- Dip the kulfi sandwiches in the melted chocolate, and sprinkle on the sprinkles. Rest on the tray lined with wax paper, repeat until complete and freeze them for at least 20 minutes or until ready to serve.

- ⅓ cup sprinkles

- Line a tray that will fit into your freezer with wax or parchment paper.
- In a microwave safe bowl add the candy melts and oil and microwave in 30 second intervals until melted; it took me about 90 seconds.
- Divide the melted chocolate melts into 2-3 different bowls and add a drop of food coloring each; mix well.
- Dip the kulfi sandwiches in the melted chocolate, covering one forth of the sandwich and sprinkle the sprinkles on.
- Rest on the tray lined with wax paper, repeat until complete and freeze them for at least 20 minutes or until ready to serve.
