What’s a Loaded Sweet Potato Waffle Chaat?
I absolutely love when sweet potatoes are roasted or made into tikkis, also known as shakarkandi ki tikki. The natural sugars in the sweet potato caramelizes, leaving you with a crunchy exterior and a creamy interior, the best way to eat sweet potato if you ask me.
So what is a Loaded Sweet Potato Waffle Chaat? It’s savory sweet potatoes waffles that are topped with creamy yogurt, chutneys, chilies, fresh cilantro, crunchy sev, and sweet pomegranate arils. It’s an explosion of flavors that will have you craving for more!
To Waffle or not?
Since I love sweet potato tikkis, I thought making them into waffles would make the absolute perfect base for a loaded chaat. This chaat is so flavorful — sweet, spicy, tangy. It has a it caramelized crisp layer encasing a creamy center. It’s a literal DREAM.
The crispy crevices of the waffle shape make for the perfect little nooks for the chutneys to puddle. While I made these sweet potato tikkis into waffles, if you don’t have a waffle maker you can absolutely make them into traditional tikkis.

How to make a Loaded Sweet Potato Waffle Chaat:
- You’ll first want to cook the sweet potatoes until they are nice and soft. I’ve made this using orange sweet potatoes and white sweet potatoes. It’s great either way.
- Once cooked, peel them and mash them in a large bowl along with the fresh herbs and spices.
- Make an even amount of 1/4 cup rounds of the spiced mashed sweet potato mixture. Flatten them out slightly and dust with semolina/fine rava.
- Grease your waffle maker with oil or ghee and warm it up. Once it’s nice and hot, add the sweet potato rounds to make your waffles.
- Assemble your chaat by stacking a few waffles and up drizzle with yogurt, cilantro mint chutney, sweet tamarind chutney, pomegranate arils, crunchy sev, diced chilies and fresh chopped cilantro. Extra squeezes of lemon are never a bad idea as is a pinch of chaat masala.
- 1.5 lbs sweet potatoes cooked and peeled (see below for how to cook)
- ⅓ cup chopped fresh cilantro
- 2 serrano peppers; minced
- 1 tablespoon ginger; grated
- 1 teaspoon salt
- ½ teaspoon cumin powder
- 1 teaspoon chaat masala
- 3 tablespoon fine semolina;rava/sooji
- 1 tablespoon ghee or oil to brush on waffle plates
- 3 tablespoon plain yogurt
- 2 tablespoon cilantro mint chutney
- 2 tablespoon sweet tamarind chutney
- 3 tablespoon pomegranate arils
- 1 green chili; finely diced
- ¼ cup chopped fresh cilantro
- 2 tablespoon thin sev
- ⅛ teaspoon chaat masala
- fresh lemon wedges
- Using your Instant Pot to pressure cooker the sweet potatoes for 9 minutes with the valve off, let the pressure naturally release. Alternatively, in a large pot add your sweet potatoes and boil for 20-25 minutes until soft.
- Once the sweet potatoes are fork tender, drain and peel.
- To a large bowl add the sweet potatoes, chopped cilantro, serrano peppers; grated ginger, salt, cumin powder, and chaat masala.
- Make an even amount of ¼ cup rounds of the spiced mashed sweet potato mixture, you should get about 10-12 rounds.
- Flatten them out slightly and dust with semolina/fine rava.
- Grease your waffle maker with oil or ghee and warm it up. Once it’s nice and hot, add the sweet potato rounds to make your waffles.
- Assemble your chaat by stacking a few waffles and drizzle with yogurt, chutneys, pomegranate arils, sev, diced chili, chopped cilantro, squeezes of lemon juice and a sprinkle of chaat masala.
- Serve immediately and enjoy!
