Zucchini Sabzi is an Indian style zucchini stir fry made with zucchini (courgette), onions, and a handful of spices.
Serves: 4
  • 3 tablespoon neutral oil
  • 1 large onion, thinly sliced; about 1 cup
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon sabut jeera / cumin seeds
  • ¼ teaspoon methi dana / fenugreek seeds
  • ¼ teaspoon saunf / fennel seeds 
  • ¼ teaspoon kalonji / nigella seeds
  • ½ cup tomato, chopped
  • 2 green zucchini /courgette, ⅛-inch half-moons
  • 1 teaspoon salt, adjust to taste
  • ½ teaspoon haldi / turmeric powder
  • ½ teaspoon lal mirch / red chili powder 
  • ¼ teaspoon jeera powder / cumin powder ¼ teaspoon dhaniya powder / coriander powder 
  • ¼ cup chopped cilantro, for garnish
  1. Heat oil in a pan over medium high heat. Add the jeera seeds, followed methi dana, saunf and kalonji.
  2. Once they start to sputter add the onions and sauté until they soften; 4-5 minutes.
  3. Lower the heat to medium and add the ginger garlic and sauté for a minute until the raw smell of the ginger and garlic disappears.
  4. Add the tomato and allow them to soften before adding in the zucchini followed by salt, lal mirch, jeera powder, and dhaniya powder.
  5. Mix well, ensuring that the zucchini is well coated. Cover and let cook on medium heat for 10 minutes, stirring once in between.
  6. Uncover and cook for another 5-6 minutes, until most of the water has dried up.
  7. Taste and adjust the salt. Garnish with fresh cilantro and enjoy!
