What is Tandoori Cauliflower 

Tandoori Cauliflower Bites are are simple as they sound. You take medium sized cauliflower florets, coat them in a tandoori masala spiced marinate and cook them just until they still have a nice bite left to them. You can use an air fryer, grill, or oven.

Cauliflower cooks fast so this is a dish that can be made in under 20 minutes. You can easily prep it ahead of them and just stick it to cook when you’re ready. It also goes great in salads or as a side.

I often see vegetarian tandoor items described as “alternatives to meat”. “This tastes just like chicken except…” Well I’m here to tell you that this doesn’t taste like chicken nor do I want it to. Neither does tandoori paneer for that matter. Tandoori Cauliflower is one of my favorite ways to eat cauliflower. It’s flavorful, still has the bite and crunch, and is good for you.

This recipe is how I got my daughter to start eating and enjoying cauliflower. In fact, I’ve now realized that if she doesn’t like a sautéed version of a vegetable, I try and prepare it in a style that still has some level of crunch. This proved right when it came to bhindi. She was never a fan of the sabzi that’s made with onions and softened while it cooks in spices, but when I made kurkuri bhindi, she was an instant fan.

Tips for the best Tandoori Cauliflower 

  • Fresh cauliflower works best: Choose a cauliflower that has a tight and firm head. The florets should be compact and the leaves, green and crisp. The color of the head should be white or pale cream.
  • Use while milk yogurt: This results in a thicker marinade, which sticks better torne cauliflower.
  • Florets vs Whole Cauliflower: You can marinate and cook tandoori cauliflower both ways, whole or florets. I prefer them to be in bites so the tandoori masala coats the entire floret. 
  • Preheat oven, air fryer or grill: However you are cooking these Tandoori Cauliflower Bites, make sure to preheat your cooking device! This helps the cauliflower evenly cook and get that perfect crisp.

Tandoori Cauliflower Bites, cauliflower florets tossed in a tandoori yogurt marinate, roasted until crispy.
Serves: 2-3 servings
  • 2½ cup cauliflower florets
  • 1 cup whole milk yogurt 
  • 1 tablespoon oil
  • 1 teaspoon cumin powder
  • ¼ teaspoon turmeric 
  • 1 teaspoon coriander powder 
  • 1 teaspoon grated ginger
  • ½ teaspoon red chili powder 
  • 1 tablespoon tandoori masala
  • 1 teaspoon garlic powder 
  • ¾ teaspoon salt
  • 1 tablespoon fresh lemon juice
  • ½ tablespoon kasoori methi; crushed 
  • 1 tablespoon chopped cilantro; for garnish
  1. Make the marinade by mixing the yogurt, oil, cumin powder, turmeric, coriander powder, grated ginger, red chili powder, tandoori masala, garlic powder, and salt.
  2. Mix until smooth. Add in the cauliflower, coat each floret and marinate for at least 15 minutes.
  3. Pre heat air-fryer for 5 minutes at 400F.
  4. Spray air fryer basket with oil, add cauliflower and spray again with oil. Cook for 16-18 minutes at 400F, flipping cauliflower halfway through.
  5. Once cooked, squeeze on fresh lemon juice and sprinkle crushed kasoori methi. Garnish with chopped cilantro.
  6. Enjoy hot.
If using oven: preheat oven at 425 F. Place cauliflower on greased baking sheet and spray with oil. Cook for 25 minutes, flipping halfway through.
