- 2 fennel bulbs; shaved on mandolin thinly
- 1 honeycrisp or gala apple; cut into thin matchsticks
- 3 tablespoon fresh dill; chopped
- ¼ cup pomegranate arils
- ¼ cup walnuts; toasted
- 4 tablespoon olive oil
- 2 tablespoon lemon juice
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Thinly slice or shave the fennel & apple using a mandoline or sharp knife.
- Add it to a salad bowl with chopped dill, pomegranate arils and toasted walnuts.
- In a jar add olive oil, lemon juice, salt and pepper. Mix until emulsified and dress salad.
- Garnish with extra walnuts and pomegranate arils. Enjoy
