Why a Bundt cake?

Bundt cakes are unique due to the signature pan they are baked in, a circular mold with a central tube that serves both aesthetic and functional purposes. This design allows heat to flow through the middle of the batter, ensuring even baking. The ridged sides of a Bundt pan create a beautifully textured exterior, giving the cake a decorative finish straight out of the mold—no elaborate frosting or intricate piping required. Its shape provides the perfect canvas for simple yet striking finishes, like this saffron milk glaze we use to add just the right touch of sweetness. This eggless saffron milk Bundt cake is a celebration of warmth, fragrance, and indulgence.

The Magic of Saffron

Saffron, often referred to as the “golden spice,” has been cherished for centuries for its delicate floral notes and vibrant hue. When steeped in milk, it releases its full depth of flavor, creating a cake that is aromatic, subtly sweet, and visually stunning. I love making desserts with saffron as they just feel so luxurious. The infusion of saffron milk lends a beautiful golden tint to the cake, making it as delightful to look at as it is to eat.

Saffron Milk Bundt Cake ingredients

Blooming Saffron

To get the most flavor out of saffron it needs to be bloomed. One of the best ways to extract flavor from saffron is to grind saffron threads into a fine powder using a mortar and pestle and then steep the saffron powder in a hot liquid for at least 15 minutes. Then add both the saffron and the liquid to the recipe. As the saffron soaks, you’ll notice the distinctive aroma and color indicating that your saffron has bloomed. I soaked the saffron in hot milk and let it sit for 10 minutes before adding it to the cake batter.

A Perfectly Balanced Texture

Eggless cakes often raise concerns about texture, but this Saffron Milk Bundt Cake delivers a soft, moist crumb with just the right amount of density. The richness of milk ensures a tender bite, while the Bundt pan helps achieve an even bake and a beautifully sculpted shape. The result? A cake that is light yet indulgent, perfect for any occasion.

  1. I was super excited to make this. But when I did I was beyond disappointed. Not sure if I did something wrong but I could taste baking soda so strongly in this cake. It was not enjoyable to us. 🙁

    1. Hi Nityaa, did you happen to mix the soda and the powder? I have tested this recipe several times and never had this issue.

      1. I know you always try the recipe multiple times before you post it on here. I’m sure it’s something I did. I did mix the baking soda and baking powder together. I’m going to attempt this again. 🤞

  2. Nisha! I am making this tomorrow for my grandpa’s bday. I have about 10 adults. Should I double the recipe? If so, any changes you would recommend? Thanks so much!

  3. Can you please provide weight measures for the flour? I ask because flours are milled differently and cup sizes aren’t standardized even within a single country not to mention across different countries. Thanks!
