HOW TO ROAST RED PEPPERS?

Wash and pat dry the peppers. Cut the red peppers in half from the stem side down. Remove the seeds and membranes and place cut side down on a baking dish lined with parchment paper. Don’t crowd the baking dish. Place in the oven and roast until blistered.

Remove from the oven and cover with lid. Let them cool. Pinch some of the skin and pull it up. Once it breaks, the skin it will peel off easily.  Discard the peels, cut the roasted red peppers in slices and store in an airtight container.

Serves: 2 cups
Ingredients
  • 3 Red Bell Peppers
  • Baking dish
Method
  1. Preheat the oven to 450 degrees F.
  2. Line a large baking dish with parchment paper or aluminum foil.
  3. Prepare the peppers by slicing them in half or quarters and de-seeding them.
  4. Place them to the baking sheet and place them cut side down.
  5. Bake for 20 to 25 minutes or until they appear wilted and charred.
  6. Remove from oven, cover and let cool.
  7. Peel off the outer layer of skin. Using a knife, slice the tender peppers into thin strips.
  8. Transfer the strips to a glass container and store them in the refrigerator for up to a week, their own juices will preserve them.
  9. Use them in sauces, sandwiches, dips or as pizza toppings.
Notes
To preserve them for a longer period, submerge them in olive oil, cover and refrigerate for 2-3 weeks.

Alternatively, fill silicone molds with peppers and olive oil, freeze and use as needed.
