Cake and custard, crumble and custard, fruit and custard, they are all favorites at home especially during the holidays. These Pomegranate and Pistachio Custard Tarts are an easy make ahead dessert and work great during the festive season.

While many custards are made with eggs, this custard is egg free. The custard is a simple recipe that can be made at home with pantry ingredients. It makes a great accompaniment to cakes, crumbles, and fruits. The vanilla custard recipe is made from milk, cream and corn flour and is delicately flavored with vanilla extract. You can also flavor it with orange extract, lemon extract or rose water.

For the tart base I used individual graham cracker tarts, if you wanted you could make mini shortbread bases as well. They work best in individual sizes as the custard is smooth and creamy. The sweetness of the custard paired with the tart crunch of pomegranate is rounded out beautifully with a bite of the graham cracker crust and roasted pistachios. It’s a simple dessert that’s full of flavor!

1 cup whole milk
2 tablespoons cornstarch
3 tablespoons sugar
1 teaspoon vanilla extract 


  • In a bowl, mix together the cornstarch and few spoons of whole milk until it dissolves without any lumps.
  • Add the remaining milk to a saucepan, along with the cornstarch mixture and sugar; mix well.
  • Heat on medium heat, stirring constantly, until the mixture starts to thicken.
  • Switch off the stove as the mixture thickens, add vanilla extract, mix well and remove from heat to allow the mixture to cool down.

Insanely delicious & simple these Pomegranate and Pistachio Custard Tarts are made with mini graham cracker crusts, creamy eggless custard and topped with pomegranates and pistachios.

  1. In a bowl whisk together the custard and rose water until smooth.
  2. Line up graham cracker crusts in a tray and spoon in custard mixture until three fourths filled.
  3. Layer on the pomegranate arils.
  4. Top with roasted pistachios when ready to serve.
