- 1 cup chopped leek
- 3 cup sliced mushrooms, I used cremini + white
- 4 springs thyme
- 1 10.5 oz can condensed cream of mushroom soup
- ¾ cup milk
- 1 tsp salt
- 1 tsp black pepper
- ½ teaspoon garlic powder
- ½ teaspoon red chili flakes
- 2 tablespoon olive oil
- 1 puff pastry sheet; cut in squares
- 1 egg; beaten or 3 tablespoon heavy cream
- Preheat oven to 400F.
- Trim the root and dark green leaves of the leek. Halve it lengthwise, then slice thinly. Rinse in a colander and drain well.
- Heat olive oil in a pan over medium-high heat. Add the drained leeks, season with salt and pepper, and sauté for 3-4 minutes.
- Reduce the heat to medium, add sliced mushrooms. Season with thyme, garlic powder, and red chili flakes. Sauté for 5-7 minutes.
- Mix in one 10.5oz can of your favorite condensed cream of mushroom soup along with milk. Whisk together until filling is smooth & creamy.
- Pour the filling into a greased baking dish and lay the puff pastry squares over top.
- Brush the top of the pie with heavy cream or a beaten egg yolk.
- Bake for 20-25 min at 400°F until golden and crispy.
- Remove from the oven. Serve & enjoy!
