Let’s talk lunch

When it comes to lunches I am all about quick and easy — during the summer even more so. Between classes, pools days, park visits and being out in the heat all day, being behind the stove for hours isn’t practical. As a kid we ate a lot of these simple + light sandwiches and wraps during weekdays, it was a lovely contrast to the delicious Indian food we would have for dinner.

Making Mediterranean Hummus Pita Pizzas

 
Last week on my Instagram I asked if you all would like more easy lunch time ideas and the answer was yes, so here you have it! Mediterranean Hummus Pita Pizzas are one of my go to lunches — sometimes dinner. This simple yet flavorful creation takes the classic combination of hummus and pita bread to new heights, delivering a burst of freshness with every bite. The cool crunch of cucumbers, the juicy sweetness of ripe tomatoes, and the tang of pickeld onions harmoniously dance on a canvas of velvety hummus spread across a perfectly toasted pita. Loaded with hummus, vegetables, pickled onions and feta, it’s a filling and nutritious meal that takes just a few minutes to put together. Because they don’t need to be served hot, you can pack all the ingredients individually and make it a picnic lunch or park dinner for some summertime fun!

While the use of an oven or toaster isn’t required for this recipe, I like to toast the pita bread in the for a few minutes on each side just until soft. To do this, you can toast on low setting for 2-3 minutes using a toaster, turn on your broil setting on low and toast for a minute on each side, or pan toast your pita. You can use mini pitas for this recipe or the full-sized ones!

Toppings

Choose your favorite toppings for the pizza. I used tomatoes, cucumbers, crumbled feta cheese, and pickled onions. Sometimes I add pickles as well. The addition of fragrant fresh herbs like dill, parsley, or mint elevates the taste, infusing each mouthful with a delightful burst of aromatic goodness. Other topping ideas include avocado, olives, banana peppers, and more!

Assembly time 

Once the pita has cooled, you will spread the hummus on top of the pita and then add your other toppings. Any hummus is fine, I vary between using plain or roasted red pepper hummus. To eat them, you can cut them into quarters, the mini pitas work out perfect for this recipe as they require no cutting.

Ingredients
  • 4 regular size pitas
  • 1 cup hummus
  • 1 cup english or persian cucumbers; chopped
  • ¾ cup roma tomatoes; chopped
  • ¼ cup pickled or raw onions; thinly sliced
  • ⅓ cup crumbled feta
  • 2 tablespoon fresh dill or parsley
  • ½ teaspoon salt
  • ¼ teaspoon fresh cracked black pepper
  • ¼ teaspoon sumac
Method
PREP
  1. Chop the cucumbers & tomatoes into small bite sized pieces
ASSEMBLE
  1. Toast pita on low setting for 2-3 minutes.
  2. Allow to cool.
  3. Spread about ¼ of a cup of hummus on each pita.
  4. Layer on cucumbers, tomatoes, pickled onions, and feta.
  5. Garnish with fresh herbs, salt, pepper, and sumac.
  6. Serve immediately.
