How to make Mediterranean Cucumber Tomato Salad

This couldn’t be any easier! Combine the cucumber and tomatoes along with the fresh herbs in a medium bowl. Add the dressing ingredients and gently toss to coat as evenly as possible. Season, and you’re done! This is best served immediately so that the cucumbers stay crisp. If you decide to make it ahead of time, add the tomatoes and feta cheese just before serving to prevent them from getting soggy.

This cucumber tomato salad is perfect for the summer when produce is abundant and goes well with just about any main dish or as a snack.

What you need

Tomatoes: I like to use cherry or grape tomatoes for this salad. If using larger tomatoes, keep in mind they are juicer so your salad will be more wet. 

Cucumber: English or Persian work wonderfully as they have thin skin and minimal seeds. To peel or not to peel is your preference. I found mini Persian cucumbers for this salad and they were perfect! 

Olive Oil: Since the dressing is minimal in this salad, use a good quality extra virgin olive oil.

Lemon Juice:
Lemon or lime juice works here. Freshly squeezed juice is best if available.

Fresh Herbs: Use what’s in season! I used fresh basil and parsley. Fresh oregano would also be delicious.

Cheeses: Adding a cheese element is completely optional here. Sometimes I make it without any cheese, other times I love adding a salty feta or a herbed goat cheese. 

Seasoning: If adding feta, you can go light or skip the salt. Be sure to add in some freshly ground black pepper for the perfect punch. I love adding a pinch of sumac to this salad for a bright, floral taste. Sumac is dried ground berries that are tart and lemony, it’s known to bring out the flavor in foods, similar to salt.

Ingredients
  • 1 cup halved grape tomatoes
  • 1½ cup English cucumber; cut into about ½ inch chunks (about one English cucumber)
  • 1½ tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 6-7 basil leaves; chopped into ribbons
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon freshly cracked pepper
  • ⅓ cup crumbled feta cheese 
  • ½ teaspoon sumac
  • ⅓ teaspoon salt (optional)
Method
  1. Combine the tomatoes and cucumbers in a bowl.
  2. Add the lemon juice, olive oil, basil, parsley, feta, black pepper, sumac and toss gently.
  3. Taste for salt and add if needed, give it one final toss.
  4. Serve immediately or store it in the refrigerator.
Notes
If making ahead of time, combine lemon juice, olive oil, herbs and seasonings and store as dressing. Cut and store cucumbers and tomatoes individually. Just before serving, add everything to a bowl + crumbled feta and toss.
