What is Kadhi

Kadhi is a yogurt and besan (gram flour) based dish that’s cooked together to create a soup like experience. I’m a huge fan of kadhi, I love Punjabi Kadhi, Rajasthani Kadhi, and this Khatti Meeti Kadhi – each kadhi has its own unique set of spices and tempering. Khatti Meethi Kadhi is a Gujarati style dish, the sweetness comes from a bit of sugar and the tartness comes from the sour yogurt. The quantity of besan in Khatti Meethi Kadhi is significantly less when compared to making Punjabi Kadhi. This kadhi is also on the thinner side, which I love because I enjoy sipping on it like soup. Of course you could always eat it the traditional way, with steamed rice.

Key ingredients 

  • Yogurt (Dahi, Curd): is the base of the kadhi, ideally tart or sour yogurt is best to make this dish. If I know I’m making kadhi I just take it out of the fridge and leave it at room temperature for a few hours. I like to use full-fat yogurt as the result is a  creamy Kadhi. Room temperature yogurt is key to kadhi not splitting.
  • Besan (Chickpea Flour, Gram Flour): is what It binds the kadhi and gives it that nutty earthy flavor.
  • Sugar: this kadhi is slightly sweet in taste, unlike the other versions. You can use white or brown sugar.

  • Spices: I like to consider this a low maintenance kadhi, it’s made with minimal spices such as jeera (cumin), rai (mustard seeds) hing (asafetida), haldi (turmeric), lal mirch (red chili powder), sugar, and salt.
  • Fresh herbs: to give this kadhi a fresh and light taste things like kadi patta, ginger, lemon cilantro add to the taste

Ingredients
  • Khatti Meethi Kadhi, Gujarati Style Kadhi is a sweet and sour spiced yogurt-based soup that’s perfect to sip on or pair with fluffy rice.
  • 1 cups plain whole milk yogurt
  • 3 cups water
  • 2 tablespoons besan / gram flour
  • ⅛ teaspoon hing / asafetida
  • 2 dry red chilies 
  • ½ teaspoon jeera / cumin seeds
  • ½ teaspoon rai / black mustard seeds
  • 1 teaspoon grated ginger paste
  • ¼ teaspoon haldi / turmeric powder
  • 1 tablespoon sugar 
  • 1 teaspoon lemon juice 
  • 1 teaspoon salt ; adjust to taste 
  • 1 tablespoon oil
  • 1 tablespoon cilantro for garnishing
Tadka / Tempering
  • 2 teaspoon ghee
  • ½ teaspoon lal mirch / red chili powder 
Method
  1. In a bowl whisk together yogurt, haldi / turmeric, and besan / gram flour until frothy.
  2. In a deep pot on medium heat warm oil and add hing / asafetida, jeera / cumin, rai / black mustard seeds, and dried red chilies.
  3. Once this begins to sputter and pop reduce heat to medium low and add the yogurt mixture slowly, mixing everything vigorously.
  4. Allow it to come to a simmer, mixing often before adding sugar and salt. Stirring often to avoid separating allow this to cook until it comes to a boil.
  5. Lower the heat to simmer, add lemon juice and mix well. Reduce the heat to low and prepare the tadka / tempering.
Tadka / Tempering
  1. Heat the ghee in a small pan. Once hot add lal mirchi/ red chili powder and add this mixture to the kadhi.
  2. Mix and allow the flavors to meld together before garnishing with fresh cilantro and enjoying.
