We have aam ka achaar with aloo ka paratha, khichadi, dal ke parathe or simple dal chawal. It’s my favorite with a simple salted paratha and dahi. It’s a must have condiment in many Indian homes!

TRADITIONAL AAM KA ACHAAR

Achaar, is a pickled food, made from a variety of vegetables and fruits, preserved in brine, vinegar, or edible oils along with various spices.

Pickles in North India are typically made with mustard oil, while the South Indian style is made with sesame oil. Achaar adds a tangy, sweet, and salty heat element as a condiment. 

Homemade pickles are prepared in the summer and are matured by exposing to sunlight for up to two weeks. As they ferment the spices and vegetables/fruits cook in the heat. The oil and spices prevent the growth of bacteria, and the end result is a pungent, full-bodied fermented flavor.

This Aam ka Achaar is made on the stovetop and is ready within minutes!

TIPS FOR MAKING INSTANT AAM KA ACHAAR 

  • Grind your spices until they are coarsely ground, this helps them bloom in the oil. 
  • If you like mango pickle with the skin you can leave it on, we prefer skinless.
  • Cut small even pieces of the raw mango to cook evenly.
  • You can choose to add more red chilli powder if you want a spicier pickle. This recipe heat level is moderate. 
  • There should be no water or moisture in the jar you store the Aam ka Achaar. The jar has to be clean and dry in order to prevent it from spoiling.
  • Refrigerate for up to 6-8 months. 
  • Always use a clean dry spoon when removing Aam ka Achaar from the jar.

Ingredients
  • 2 raw/semi raw mangoes
  • 1 cup of oil (I use pure olive oil)
  • 2 tablespoon coarse lal mirch
  • 1 teaspoon haldi
  • 1½ tablespoon salt
  • 1 tablespoon saunf
  • ½ tablespoon kalonji
  • ½ tablespoon methi dana
  • 1 tablespoon skinless, split mustard seeds
  • 2 tablespoon vinegar
Method
  1. In a spice grinder or with a rolling pin, coarsely crush the kalonji, saunf and methi dana.
  2. Wash and dry the mangoes. Peel the skin and discard. Cut the mango into thin small slices, discarding the soft pit.
  3. In a heavy bottom pan add oil and heat on medium heat.
  4. Add the coarsely crushed kalonji, saunf and methi dana.
  5. Once it starts to sputter add the skinless split mustard seeds, followed by the coarse lal mirch.
  6. Mix well and add the raw mango pieces, haldi and salt.
  7. Allow to cook for 8-10 minutes until the waters start releasing and the mixture starts to bubble.
  8. Add the vinegar, cook for an additional 5 minutes and turn off heat.
  9. Allow to cool before storing in a clean, airtight glass or ceramic jar.
Notes
Traditionally, achaars/pickles are made with either mustard or sesame oil. As the pickles cook in the heat of the sun, the flavors infuse with the spices and to create a unique flavor profile.

For this achaar, we find mustard oil too strong hence the use of olive oil which also has a nice earthy, nutty flavor. You can use the oil of your choice.

Store Aam ka Achaar in a clean and dry jar in order to prevent it from spoiling. Refrigerate for up to 6-8 months. 

Always use a clean dry spoon when removing Aam ka Achaar from the jar.
