Galaxy Shrikhand Bark | Creamy saffron and cardamom Shrikhand reimagined in a bark that’s out of this world.

Ingredients
  • 1 ½ cups Greek yogurt (I used Chobani whole milk yogurt)
  • ½ cup powdered sugar (table sugar that’s been powdered)
  • 4-5 saffron strands
  • 2 teaspoons milk; warmed 
  • ½ teaspoon cardamom powder; coarsely crushed
  • 1 tablespoon almonds; chopped
  • 1 tablespoon pistachios; chopped
  • food coloring; I used pink, blue and purple
  • edible glitter
  • gold star sprinkles
Method
  1. Add the saffron to the warm milk, store and allow it to bloom.
  2. In a bowl add greek yogurt, powdered sugar, and saffron milk. Fold and mix. Do not stir or mix vigorously else shrikhand will get a runny.
  3. Fold in cardamom powder and nuts.
  4. Separate the Shrikhand into 4 small bowls. Add a little of the pink, purple, blue coloring to each bowl, leaving 1 white, and stir to combine. I added 2-4 drops as the colors will deepen with time.
  5. Line a 9x13 baking tray with parchment paper and place a dollop of each color of yogurt, along with the white, side by side. Use a butter knife or the back of a spoon to swirl the colors together.
  6. Add a few dusts of edible glitter and gold star sprinkles scattered throughout.
  7. Cover with plastic wrap, and transfer to the freezer to set for 4-6 hours.
  8. When you‘re  ready to serve the Shrikhand bark, lift it out of the baking dish using the parchment paper, cut it into pieces, and enjoy.
  9. The Shrikhand bark will soften fairly quickly, so transfer any uneaten pieces back to the freezer to store.
