Spicy Shrimp and Spinach Pasta. A fast, flavorful, healthy shrimp recipe! With garlic, fresh veggies, red pepper flakes and an easy tomato sauce. Quick and delicious!

Ingredients
  • 8 ounces dry pasta; penne or ziti
  • 1 pound raw large shrimp — peeled and deveined (I use thawed frozen shrimp to save time)
  • 3 cups packed spinach
  • ½ cup chopped bell pepper
  • ⅓ cup frozen mixed vegetables or any vegetables of your choice
  • 2 cloves garlic; thinly sliced
  • 1 tablespoon cooking oil
  • 1 tablespoon red chili flakes
  • ½ teaspoon salt; adjust to taste
  • ¼ teaspoon freshly cracked pepper
  • 1 24-ounce jar Raos Marinara Sauce
Method
  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta to al dente according to package instructions.
  3. Meanwhile, heat oil in a large, deep skillet or Dutch oven over medium-high heat.
  4. Once the oil is hot, the garlic followed by half of the red chili flakes. Let cook for 30 seconds, then add the shrimp.
  5. Once the shrimp starts turning pink, add the vegetables and spinach.
  6. As the spinach wilts, season with salt and pepper.
  7. Add in the pasta sauce. Bring the sauce to a gentle simmer and add in the pasta to the sauce.
  8. Mix well, add in remaining red chili flakes and garnish with fresh basil or oregano.
  9. Enjoy immediately.
