Mediterranean Hummus Pita Pizzas

- 4 regular size pitas
- 1 cup hummus
- 1 cup english or persian cucumbers; chopped
- ¾ cup roma tomatoes; chopped
- ¼ cup pickled or raw onions; thinly sliced
- ⅓ cup crumbled feta
- 2 tablespoon fresh dill or parsley
- ½ teaspoon salt
- ¼ teaspoon fresh cracked black pepper
- ¼ teaspoon sumac
- Chop the cucumbers & tomatoes into small bite sized pieces
- Toast pita on low setting for 2-3 minutes.
- Allow to cool.
- Spread about ¼ of a cup of hummus on each pita.
- Layer on cucumbers, tomatoes, pickled onions, and feta.
- Garnish with fresh herbs, salt, pepper, and sumac.
- Serve immediately.
