Ingredients
  • 1 cup cooked quinoa
  • 2 cups plain yogurt or curd
  • ⅓ cup grated carrot
  • ⅓ cup grated cucumber
  • 2 teaspoons kosher salt, adjusted to taste
  • 2 tablespoons milk or water
For the Tadka
  • 1 teaspoon rai (mustard seeds)
  • 1 teaspoon jeera (cumin seeds)
  • 1–2 green chilies, finely chopped (optional)
  • 1 sprig curry leaves (8–10 leaves)
  • 2 tablespoons raw peanuts
  • 1½ tablespoons ghee or mustard oil
Garnish
  • Fresh cilantro
  • Pomegranate arils
Method
  1. In a large mixing bowl, combine the grated cucumber, grated carrot, whisked yogurt, milk or water, and salt. Add the cooked quinoa and mix until everything is well combined. Set aside while you prepare the tempering.
  2. Heat the ghee or mustard oil in a small pan over medium heat. Once hot, add the mustard seeds and cumin seeds. When they begin to crackle and sizzle, add the chopped green chilies, curry leaves, and peanuts. Sauté for 1–2 minutes until fragrant and the peanuts are lightly toasted.
  3. Pour the hot tadka over the yogurt quinoa mixture and gently stir to combine. Taste and adjust salt as needed.
  4. Finish with fresh cilantro and pomegranate arils before serving.
  5. Serve chilled or at room temperature and enjoy.
