Welcome to my Salad Series where I’ll be sharing my favorite salads, all season long! When summer arrives with its scorching heat, I crave something light, refreshing, and delicious to cool us down. I’ve eaten this salad day after day over the last few weeks and still haven’t tired from it. The fresh and light combination of crisp cucumbers, aromatic fennel, nutty pistachios, and fresh herbs not only satisfies our taste buds, it’s also SO good for you.

Let’s talk ingredients:

  • Fennel bulb: this has a very mild licorice flavor, it’s crunchy, aromatic, and so refreshing in summer.
  • Cucumbers: for this salad I like to use English or Persian cucumbers as they have a better crunch, thinner skin, and less seeds.
  • Green Capsicum (Bell Pepper): optional but since making this salad several times, I love the sweet crunch this adds to the salad. 
  • Pistachios: lightly roasted pistachios, if using salted adjust your salt in the dressing.  
  • Fresh herbs: dill pairs so well with this salAd, I’ve also added fresh mint in days I’ve wanted to pack in some zest.
  • Lemon juice: please use fresh, I promise you it will make all the difference
  • Olive oil: use a good quality olive oil, I use this one.
  • Salt, pepper, sumac: a few spices that just bring everything together.

EXPERT TIP:

Use a mandolin. I know some can seem intimidating, I have this one and love it! When using a mandolin the fennel is transformed into thin manageable ribbons. Try and keep the cucumber, fennel, and green bell pepper as thin as possible. Of course, you can also use a good chef’s knife to slice everything thinly as possible!

Creating a Cucumber Fennel and Pistachio Salad is a breeze. Begin by slicing cucumbers, fennel bulbs, and green bell peppers thinly. Toss them together in a mixing bowl, then add a handful of fresh dill and/or mint leaves for an additional burst of flavor. In a separate bowl, whisk together some lemon juice, olive oil, salt, and pepper to create a light dressing. Drizzle the dressing over the salad, and gently toss until the ingredients are well-coated. You can make the salad ahead of time and add the dressing 10-15 minutes before serving, allowing the flavors to meld together. When ready to serve, garnish with a pinch of sumac and chopped, toasted pistachios for an added crunch.

Made with Cucumber, Fennel, and Pistachio and dressed with dill, fresh lemon juice, and olive oil this perfect summer salad is light and refreshing

Serves: 2-4
Ingredients
  • 1 large fennel bulb; trimmed 
  • 3 small persian cucumbers or 1 english cucumber 
  • ⅓ cup fresh chopped dill
  • ¼ cup green bell pepper / capsicum, thinly sliced (optional but recommended)
  • ⅓ cup olive oil 
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup raw pistachios; lightly toasted + crushed
  • ¼ teaspoon sumac 
Method
  1. Toast raw pistachios and set aside.
  2. Trim the fennel bulb, using a mandolin shave fennel thinly (or finely slice as thin as possible).
  3. Finely slice the cucumbers and green pepper with the mandolin.
  4. Chop the dill and add all the above to a large serving bowl.
  5. In a small bowl add the olive oil, lemon juice, salt, and freshly cracked pepper, whisk and pour on salad. Toss the salad to make sure it’s well dressed and let marinate in the fridge for 10 minutes before serving.
  6. Taste, adjust for salt.
  7. Garnish with chopped roasted pistachios and a dusting of sumac.
