If you’ve made my Murgh Makhani, you know how passionately I feel about a good butter chicken! It’s got to have the right balance of spicy, savory, and just a hint of sweet to bring it all together. These wings deliver all that and more. In fact when I made them my husband could not stop raving about how these were the best wings I’ve made til date (and we make a lot of wings around here!)

This recipe is a multi step one but trust me it’s worth the effort and everything comes together beautifully! I often get asked which Tandoori masala I use and I have a homemade but when I haven’t made a big batch of that then I use Swad Tandoori Masala.

I love to air fry my wings but if you don’t use an air fryer or it’s occupied for another dish, here’s how to cook the wings in an oven. Pre heat the oven to 400 degrees. Place the wings on a greased grill tray with another tray underneath to collect the drippings. Bake for 35-40 minutes, flipping midway to ensure even cooking.

Ingredients
  • 2 lbs chicken wings; patted dry (about 18 wings)
MARINADE
  • 2 tablespoon oil
  • ½ tablespoon lemon juice
  • 1 tablespoon Tandoori masala 
  • 1 teaspoon lal mirch / red chili powder 
  • ½ teaspoon haldi / turmeric 
  • 1 teaspoon cumin / jeera powder
  • 1 teaspoon dhaniya / coriander powder
  • 2 teaspoon salt
MAKHANI SAUCE
  • 3 tablespoon butter
  • 1 tablespoon oil
  • 2 elaichi / green cardamom 
  • 1 tej patta / Indian bay leaf
  • ⅓ cup onion; finely diced
  • 1 tablespoon ginger garlic paste
  • ¼ cup tomato; finely chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon Tandoori masala
  • ½ teaspoon lal mirch / red chili powder 
  • ½ teaspoon cumin / jeera powder
  • ½ teaspoon dhaniya / coriander powder 
  • ½ teaspoon garam masala
  • 1 teaspoon salt 
  • ½ cup heavy cream
GARNISH
  • 1 teaspoon kasoori methi / dried fenugreek 
Method
PREP
  1. Wash the wings with equal parts vinegar and cold water. Drain and throughly pat dry.
  2. In a large bowl add your wings followed by oil, lemon juice, Tandoori masala, lal mirch / red chili powder, haldi / turmeric, cumin / jeera powder, dhaniya / coriander powder, and salt. Mix well.
COOK THE WINGS
  1. Preheat the Air Fryer 400 F degrees for 2 minutes.
  2. Add the wings in a single layer to the air fryer basket and cook for 12 minutes at 385 F.
  3. Flip over the chicken wings and cook for another 10 minutes at 385 F.
MAKE THE SAUCE
  1. In a large pan melt butter and oil on medium heat. Add cardamom and bay leaf followed by onions. Cook until soft and translucent.
  2. Add in ginger garlic paste, tomatoes, and tomato paste. Cook until the waters release and the mixture is jammy.
  3. Add in Tandoori masala, lal mirch / red chili powder, cumin / jeera powder, dhaniya / coriander powder, garam masala, and salt. Mix well before adding heavy cream, mixing, turning off heat, and allowing to cool down.
  4. Blend mixture together, warm it in the same pan with a tablespoon of butter.
TOSS + SERVE
  1. Toss the wings with the makhani sauce until we’ll coated. Mix in crushed kasoori methi / dried fenugreek and toss. Garnish with scallions or cilantro and serve hot.

  1. Made this tonight!!! The chicken itself was such a super hot that my child devoured them while telling me “mommy this is the best chicken ever”.

    It was a super hit on Super Bowl night!
