“I think of street food as the antidote to fast food; it’s the clear alternative to the king, the clown and the colonel.” -Anthony Bourdain
Chaat
If there’s one thing that will leave you wanting more after visiting India it’s chaat, or street food. Chaat, which literally translates into “taste” is the general term for South Asian street food. There are cities, in fact neighborhoods, known for their street food.
One of my favorite kinds of chaat is Papdi chaat, crispy flat fried crackers (papdis) topped with potatoes, moong sprouts, onions, chutneys, yogurt and crispy sev. The perfect combination of crunchy, sweet and spicy flavors.
A Party Appetizer
This is a perfect party appetizer. Prepare all the ingredients in advance, setting up a Papdi chaat station and allow your guests to assemble it themselves to their taste. As a host, you get to enjoy and not worry about serving or reheating anything.
Using Up Leftovers
I don’t think Papdi chaat gets the credit it deserves, it’s literally the perfect canvas for add your favorite combination of crunchy, sweet and spicy flavors. It’s also the perfect way to use leftovers. Left over Imli Chole? Add them to your papdi chaat. That tiny bit of aloo sabzi and small bowl of leftover rajma? Add it to your chaat. Top it off with chutneys, yogurt, chaat masala, and crispy sev and your quick yet chatpata lunch is sorted!
