NYC Weekend + Buddakan Edamame Dumplings Recipe

I hope everyone had a wonderful Memorial Day weekend! I know I sure did! This past weekend I had the pleasure of vacationing with four inspiring & diverse women whom I have had the opportunity of connecting  online.  It was a wonderful experience that was filled with lots of shopping, new experiences, and AMAZING food!

I had to share some foodie experiences that I had the pleasure of indulging in. Some of these places were new to me and some were already etched onto my favorites list. Here’s a look at a fun weekend in NYC, some must try restaurants and how to make the infamous Buddakan’s Edamame Dumplings by Chef Michael Schulson.

Buddakan

Overview

This Zen meets vintage European venue will have your mouth watering from the ambiance alone.  You are greeted by a modern concierge/host desk which leads you to a casual chic waiting and bar area. You can choose to diner here or move on to the dining rooms. There are two dining “room” ahead,  one that wraps around the main dining room which consists of red glowing cave like areas or the main dining hall downstairs which encompasses European draping and gorgeous gold and cream chandeliers. Remember Carrie & Big’s  rehearsal dinner in SATC? Yep, this is the place.

Bryant Park Grill & Cafe

Overview

Indoor and Outdoor grill serving New American fare. This bar/grill is nestled in Bryant park behind the New York City Public Library. A wonderful outdoor eating area offers you fresh food with New York City as a backdrop. They offer brunch, lunch, dinner, and cocktails.

Overview

As you enter this graceful oasis you are welcomed by a host/hostess area with a birdcage goldfish tank. The bar area is filled with jars of floating orchids and tea candles. The dining area wraps around a centric pond which is filled with Coy fish, lotus flowers, and floating candles. This romantic tranquil restaurant specializes in refined Thai cuisine. They serve brunch, lunch, dinner, and cocktails.

Max Brenner

Overview

An all time favorite spot of mine for years! The “bald man” will have anyone believe that Willy Wonka’s chocolate factory, does in fact exist. The smell of chocolate fills the air as you enter this decadently rich restaurant where you see pipes of chocolate suspended above. A haven for any dessert/chocolate lover. With locations popping up all over the US, Max Brenner has become quite the hot spot for brunch, dinner, and random sweet treat fixes.

As for the recipe, the Edamame Dumplings at Buddakan left our mouths watering the entire weekend. The silky soft dumplings just melted in your mouth, with each flavor complimenting the other.  Even after our third order of this savory delicacy, we were still craving more! Once I got home I did a little research on this dish and was able to find the recipe from Chef Michael Schulson of Buddakan New York himself!

Buddakan Edamame Dumplings

Buddakan Edamame Dumplings
 
A creamy edamame-truffle puree wrapped in a tender dumpling and doused in a Sauternes-shallot broth.

Ingredients
  • Edamame Filling:
  • 3 cups edamame
  • ½ pound butter
  • ½ cup cream
  • ½ cup truffle oil
  • Dashi broth
  • Salt
  • 1 - 12 oz package square wonton wrappers
  • Shallot and Sauternes Broth:
  • 16 ounces shallots, thinly sliced
  • 3 cups Sauternes
  • 1 cup chicken stock
  • Pinch of thyme
  • Salt and pepper as needed
  • Onion sprouts
  • 1 package of wonton wrappers
Method
  1. For the Edamame Filling:
  2. In dashi broth, cook the edamame till tender, about five minutes. Strain and puree with the other ingredients. Let the filling set in the fridge overnight, till firm.
  3. For the Shallot and Sauternes Broth:
  4. Caramelize the shallots, and deglaze with the wine. Reduce and then add the stock. Simmer with the thyme for ten minutes, and season with salt and pepper.
  5. To Assemble:
  6. Set up your dumpling-making station with the wonton wrappers covered loosely with a damp towel, a small dish of water, edamame filling, a teaspoon measuring spoon and a parchment-lined sheet tray. Take out 3-4 wrappers at a time and lay them on the counter with the point facing up. Moisten the two top edges of the wrapper by dipping your finger in water and rubbing it along the edge. Add a teaspoon of filling and fold the dumplings into half moon shape. Pinch to close. Steam dumplings till tender. Top with the broth and garnish with the onion sprouts.

  1. Edamame + butter +cream?? It doesn’t seem like that could possibly go wrong! My top NYC restaurant is Candle 79- it’s by far the best all vegetarian restaurant in the city.

    1. I have a question about the Dashi broth in this recipe. How much do you use to cook the edamame in and at what temperature and for how long? I guess that is more than 1 question…lol. I am making the dumplings next weekend for my Game Day party and just want them to come out as close as possible to the real thing.

  2. is the folding different from that in the picture? I”m confused if its a square wonton wrapper and you fold it up, it’s a triangle right? or is that what you mean by crescent half moon shape! Let me know !

      1. Plus, if you notice in the video, he mentions that they also include green peas in the filling in addition to the edemame.
