 Happy Sunday Sunshines! It’s brunch time and guess what I’m making? Chocolate Pancakes! Yeah, you heard me… chocolate! It’s World Nutella Day and we are celebrating with Nutella Coffee Pancakes. A day dedicated to Nutella is well worth the celebrations (+ a great excuse to devour the chocolaty hazelnut spread all day long.) The hint of coffee really brings out the chocolate and hazelnut flavors.
Nutella Coffee PancakesBreakfast/Brunch is one of my favorite meals to cook, there are so many options! Pancakes are a great base for any flavor theme, you can pretty much add anything and they will taste even better. I topped these with fresh strawberries and agave syrup. You could serve these with strawberry compote, whipped cream, chocolate syrup, or just enjoy them on their own. As for now, we’re off to enjoy these sweet breakfast treats. Happy World Nutella Day!

From childhood memories to oozing hot crepes, from breakfasts on vacation to free-spooning sessions on the couch, Nutella is prominent in the memories of many children and grown-up children in the world. In 2007 we gave Nutella its own holiday, and this year we’re continuing the tradition. Sara from Ms. Adventures in Italy and Michelle from Bleeding Espresso solemnly declare Sunday, February 5th “World Nutella Day 2012″ – a day to celebrate, to get creative with, and most importantly, to EAT Nutella.

Nutella Coffee Pancakes
Ingredients:
1 1/2 cups flour (all-purpose)
3 tablespoons Nutella
1  tablespoon white sugar
3 1/2 teaspoons baking soda
1/4 teaspoon salt
3 tablespoons butter (melted)
1 teaspoon instant coffee
1 1/4 cups milk
1 egg
Nutella Coffee Pancakes
 Method:
 In a large bowl, sift together flour, sugar, baking soda, instant coffee, and salt. Make a well in the center of the mixture and pour in the milk, egg, and melted butter. Mix until smooth. Add Nutella and wisk mixture to ensure there are no lumps.
Heat a lightly buttered or oiled griddle/heavy pan over medium heat. When the pan is hot add 1/4 cup of batter to the pan. Once bubbles start appearing around the edges, flip and continue cooking on the other side. Repeat for remaining mixture. Garnish with desired toppings and devour!
Makes 8 medium size pancakes or 16-18 silver dollar size pancakes.
