The holidays are here!!! I love this time of year, family time, lights, holiday spirit, good food, dessert galore, glitter and sparkles! Once of my favorite things to do during this time of year is Christmas Light Drive Thru’s! A few days ago Hubby Darling took me for a drive thru the local neighborhoods so we could see all the decorated houses.
After seeing all the festive colors and lights I wanted to make a cupcake with some holiday cheer. These Holiday Funfetti Cupcakes are the perfect little holiday treat! A vanilla cupcake with a chocolate ganche frosting. From the outside it looks like an ordinary cupcake, but open it up and SURPRISE! Red & Green funfetti. In fact, you could customize these with different colors sprinkles for any holiday theme.
Ingredients:
For the cupcake:
1 1/2 cups flour
1/2 cup butter
1 cup sugar
2 whole eggs
1 tablespoon vanilla extract
1 1/4 teaspoon baking powder
1/3 cup Greek yogurt
1/4 cup of milk
1/3 cup colored sprinkles (I used red and green)

Method:
For the cupcakes:
Preheat the oven to 350 degrees F. Line cupcake tin with cupcake liners. Cream the butter and sugar in the bowl of an electric mixer until fluffy, about 2-3 minutes. Add the vanilla, eggs, and yogurt and beat until combined. Mix the dry ingredients in a bowl. Add the dry ingredients, alternating while adding the milk. Once batter is smooth, fold in the sprinkles. Pour into cupcake tins and fill 2/3 of the way full. Bake for 15-18 minutes. Once cool, frost and decorate with sprinkles.
For the frosting:
In a heavy pot, heat heavy cream. Once it comes to a boil, pour over chocolate chips and mix. Add confectioners sugar and beat. Let sit until frosting cools completely. Frost cooled cupcakes generously.
Makes 12-18 cupcakes.
