This nutmeg and cardamom Spiced Chai Martini served in a crushed biscuit rim glass is a perfect way to enjoy the flavors of chai in form of a cocktail.

Ingredients
Spiced Chai:
  • 2 cups water
  • 1 teaspoon loose black tea
  • 1 cardamom pod, crushed
  • ½ cup evaporated milk
  • 1 tablespoon brown sugar
  • Numeg, freshly ground; pinch
Martini:
  • 4 oz spiced chai, cold
  • 2 oz ginger flavored vodka
  • 2 tablespoon crushed biscuits, Parle-G or Marie
  • Nutmeg, freshly ground
Method
  1. First, make the chai. In a pot, heat water until boiling, then add tea leaves, crushed cardamom pod and a pinch of freshly ground nutmeg. Simmer for a further 5-6 minutes at medium heat.
  2. Add evaporated milk and bring to a boil again. Strain through a fine strainer then return the chai into the pan. Add sugar, stirring until well mixed and dissolved. Refrigerate until cold.
  3. To make two cocktails, rim two martini glasses with crushed biscuits, preferably parle-g or marie, set aside. Add ice to a cocktail shaker along with 4 oz of the chilled chai and 2 oz ginger vodka. Shake well and pour into martini glasses. Garnish with a dusting of ground nutmeg & serve.
