As Diwali inches closer I look forward to decorating our house, making holiday foods and watching my little ones eyes twinkle with excitement as we share this special time of year together. Growing up, during Diwali my Mom filled our mornings with bhajans (religious hymns), our days with delicious vegetarian fare and the weekends with Diwali parties full of fireworks!

These cake pops are a fun way to bring Indian inspired flavors to your table with a modern twist. They are eggless which makes them appropriate for those observing a vegetarian diet or fasting. You can make these in advance and keep them for a dessert or gifts (it’s best to consume them within 3 days). They’re a great way to fill mithai boxes or goody bags!

I used this eggless cake and frosting recipe (minus the pistachios in the cake) for the base of these cake pops. Oh and of course, these are toddler approved, as you can tell from the pictures!

Hindus celebrate the homecoming of Lord Rama, Sita Devi, and Lakshmana after being exiled for 14 years and the defeat of King Ravana of Lanka. They use diyas because the people of Ayodhya (home of Rama) lit the paths for the Princes and Princess to find their way home. They celebrate with a puja to Lakshmi Devi (Goddess of Wealth and Prosperity), delicious food, fire crackers, and diyas!

Indian Inspired cake pops that are eggless and flavored with cardamom, sweet rose water and covered in white chocolate.

Ingredients
  • 9 inch cake
  • 2 tablespoons frosting
  • 20 cake pop sticks
  • 2 tablespoons crushed pistachio
  • 1 tablespoon crushed dried roses
  • 1½ cup white chocolate chips
  • 1 tablespoon oil
  • 1 teaspoon rose water
  • ½ teaspoon crushed cardamom
Method
  1. Bake the cake according to instructions and cool down to room temperature.
  2. Trim the cakes edges and in a large bowl, crumble the cake with your hands. Add the rose water, crushed cardamom and two tablespoons of frosting to the crumbled cake and mix with a spoon or your hands.
  3. With a small cookie/melon scoop/dry tablespoon place cake in the palm of your hands and roll until a smooth ball.
  4. Melt about ¼ cup of chocolate chips in a small bowl. Heat in 15 second intervals to avoid overheating the chocolate .
  5. Dip the tip of each cake pop stick into the melted candy and poke it into to ball about half way through. Place each cake pop onto a clean plate or baking sheet and transfer to the freezer for about 20 minutes.
  6. To make the chocolate coating melt the rest of the chocolate in a narrow bowl or microwave safe glass. Melt them in 30 second intervals with mixing in between. Once it's melted well, add the cooking oil and mix well with a whisk or fork.
  7. Once the cake pops have been in the freezer for 20 min, dip each into the chocolate and tilt to the side slowly to make sure the entire cake pop is covered. Then slowly pull up the cake pop.
  8. Place in a Styrofoam block or cake pop holder and sprinkle with crushed pistachios and roses.
  9. Let it stand for about an hour before serving.
